Gor Keri, also known as Goerkeri or Gud Keri nu Athanu, is a traditional sweet mango pickle from Gujarat, India. This pickle is made using raw mangoes, jaggery, and a blend of spices, creating a sweet and spicy flavor profile. The process involves sun-drying the mango pieces and mixing them with jaggery and a masala that typically includes ingredients like coriander seeds, split mustard seeds, fenugreek seeds, fennel seeds, cloves, black pepper, asafetida, turmeric powder, and red chili powder (Nehas Cook Book) (Sanjeev Kapoor) (Veg Indian Cooking).
To make Gor Keri, raw mango pieces are first marinated with salt and turmeric, left overnight, and then sun-dried. The dried mango pieces are mixed with the jaggery and the spice mix, and the mixture is allowed to sit for several days until the jaggery melts and the flavors meld together (Sanjeev Kapoor) (Mary's Kitchen).
